Whenever I am trying to eat healthier, the hardest part is finding fun ways to get my protein in. Did you know that shrimp is one of the cleanest protein sources? These shrimp skewers are crispy, almost like tempura - minus the deep frying, they are sweet, and so quick to make.
Some Notes on the Ingredients:
Shrimp - I use whatever I can find on sale at the grocery store, but I always try to find the biggest shrimp possible. Usually there’s more flavour compared to the small ones.
Cornstarch - This can also be substituted for potato or tapioca starch if you don’t have! This is what gives the crunchy exterior!
Korean BBQ seasoning - You can find these seasoning blends at the grocery store. Mine is from Farm Boy.
Sriracha mayo - You can also use just regular sriracha sauce here, I just had the mixed mayo when I developed this recipe and found that it turned out really nice.
Sweet Thai chili sauce - I could put this sauce on almost anything. Please don’t skip I promise it is not that spicy.
Gochujang paste - You can usually find this in the International isle at the grocery store.
Notes:
You can also air fry these skewers! Just be sure to brush them with a little bit of oil before you put them in!
