I used to think that salads were boring - until I made this one. This loaded salad gives you all the best flavours from a cheeseburger and can be meal prepped to eat throughout the week! It’s a great recipe to keep you on track with all of your 2025 goals!
Some Notes on the Ingredients:
Potatoes - I like to use baking potatoes or yellow-flesh.
Ground beef - You can sub this for ground turkey or chicken if you are trying to be extra healthy!
Eggplant - I like the eggplant flavour in this because I find it goes well with the beef mixture and I wanted to add extra veggies. You can sub eggplant for any veggies of your choice or leave it out if you’d prefer that.
Mixed greens - I usually use spring mix, but any lettuce mix would work really well. I’ve even made this salad with kale and it was extra leafy if you like your salad that way.
Toppings (cheese, avocado, pickles, tomato, green onion) - Add whatever other toppings you like to put on your usual burger order.
Lack of mustard - This is on purpose because I hate mustard :)
Dressing - The dressing sounds really weird, I know, but it brings the salad together so nicely. TRUST ME
Notes:
Make to lay the fries out in one layer, even if you need more than 1 tray. This makes sure that they come out super crispy. You won’t believe they are baked.
You can use the same strategy with the eggplant, or you can dice it up and throw it in with the onions. I prefer roasted eggplant because it adds depth of flavour.
Will It Meal Prep?
YES!
I used to meal prep this salad almost weekly 2 years ago when I was on my weight loss journey. I find that meal prepping satisfying lunches helped me to make the most progress. Here are some tips I learned about meal prepping salads:
Store all the different components separately.
Keep the meat mixture in one container, the toppings and fries in one container, the dressing in one container, and the greens in one container.
Then when you are packing your lunch, throw them all into your lunch container, pack the dressing separately, and you are good to go.
Keep all the toppings as dry as possible.
Keep a paper towel at the bottom of the container to absorb any excess moisture. This helps to keep fresh for as long as possible.
Don’t plan to meal prep it for more than 5 days.
I always meal prepped 1 day a week for 5 days only. Any longer than that and it started tasting a little funky…
