St. Paddy’s is in 2 days and what is more Irish than potatoes??? This recipe is my go-to potato recipe for sides because they crisp up so perfectly, you’ll think they are deep fried but without all the extra oil. Once you try these, they will definitely be part of your weekly potato rotation. (Am I the only one that has a weekly potato rotation?)
Some Notes on the Ingredients:
Mini potatoes - This recipe works really well with larger potatoes sliced up in smaller chunks too, I just really like mini potatoes.
Baking soda - Like with all my recipes, JUST TRUST ME. I know it seems weird.
Olive oil - I recently got a really good quality jug of olive oil and a refillable bottle with a nice spout for pouring. I AM OBSESSED.
Lemon - The zest makes a really big difference here, giving it that extra lemony flavour.
Salt & Pepper - Measure with your heart :)

Don’t be afraid to really rough up the potatoes, the rougher they get, the crispier they will get.
Soaking the potatoes in water before the cooking process helps to get rid of the excess starch. If you skip this step, the potatoes won’t turn out as great but it isn’t a deal breaker.
