I don’t know about you guys but I always tell myself it’s still summer until the first colder day in fall. Seems like it’s actually happening now so here I bring you my final summer recipe of the year; a loaded peach cobb salad with all the fixings. Any salad you see here on Emma’s Bites is always packed with protein, flavour and is a FULL MEAL. Check out the full recipe below!
Some Notes on the Ingredients:
Mixed lettuce - You can choose any lettuce you prefer. I used a mix of Boston lettuce and green leaf because I love the super leafy greens. I find the texture of it is more appealing than regular romaine for loaded salads like these.
Notes:
I added a soft boiled egg to mine for some added protein! I always boil my eggs for exactly 8 minutes and immediately soak it in an ice bath until cooled before peeling.
If you noticed that I repeated the seasoning in the chicken marinade and dressing, that is not a mistake! I often do that in my recipes for consistency and an added depth of flavour.
