If you love french onion soup, you HAVE to try my newest recipe. This pasta is so warm, cozy, creamy, cheesy, and the best part is that there are 3 hidden veggies that you won’t even taste. Check out the full recipe below.
Some Notes on the Ingredients:
Onions - Yellow onions, cooking onions or Spanish onions would all work well with this recipe. Just be mindful of the size, I used 4 medium sized yellow onions.
Sausage - I used the Johsnonville Sweet Italian sausage, but any sausage in a casing that doesn’t have any heavy spice blends would work!
White Wine - Any dry wine will work, I used Chardonnay.
Rigatoni - I personally love this pasta shape, but feel free to use any pasta you have! However, I would not recommend long pasta like spaghetti or fettucine.
Beef Broth - I used bouillon cubes with boiling water, but if you have homemade or boxed broth, those are also great.
Gruyere cheese - I find that Gruyere adds a great depth of flavour. Alternatives could be mozzarella, Jarlsberg, or even white cheddar.
Cream - I used half and half!
Notes:
When cooking the sausage, try to break it up into the smallest pieces possible so that you don’t have any huge chunks of sausage in there.
If you want a little extra protein, you could always add a couple more links of sausage.
Caramelizing onions can take some patience, but trust me, don’t crank up the heat to make the onions finish cooking faster because they will burn! Cooking them at medium heat and stirring occasionally will lead to the best results.
Your kitchen will smell incredible when making this, if you like the smell of onions….
