Lasagna is my absolute favourite meal of all time. Correction, my Nonna’s lasagna is my favourite meal of all time. This is not my Nonna’s lasagna recipe, BUT it is a way to get your fix of lasagna in less than 30 minutes when you are craving it. Packed with hidden veggies and lots of protein, my lasagna soup is nutritious, delicious and will pack up great for meal prep as well!
Some Notes on the Ingredients:
Zucchini + eggplant - I really just added these for some extra veg and flavour, but if that’s not what you are looking for, leave them out! I will suggest that you chop these up, along with the other vegetables, super small so that there aren’t huge chunks in your soup.
Passata - If you prefer using jarred tomato sauce from the grocery store, this will also work. I just personally like how passata is just strained tomatoes and I can add my own flavouring.
Cream - I am a half and half queen, you know that!
Lasagna sheets - you could also use any pasta you prefer, but then could you still call it lasagna soup?
Mozzarella - I love a cheesy lasagna, but if you don’t you could totally leave this out and it would still be delicious.
Notes:
You could totally make this as meal prep! Just divide it into a couple containers and you are set to go for a week of lunches.
