Pasta will always be a comfort meal for me and this Marry Me pasta is no different. It comes together quickly and is perfect for a weeknight or a date-night in. You have to give it a try.
Some Notes on the Ingredients:
Shrimp - I usually just use frozen shrimp! If you prefer a different type of protein, any substitute would work well with this recipe, it is super versatile.
Shallot - make sure to dice it super finely so that you don’t have huge chunks of onion in there!
Chicken broth - I used a bouillon cube and boiling water!
Fettuccine - I felt that fettuccine made it feel more fancy (it’s all in my head). BUT it also works really well with orzo.
Tomato paste - tomato paste works really well as a thickening agent, but if you don’t have any, you can add a tomato sauce. It may not turn out as creamy though.
Parsley - Trust me, add the fresh parsley on top it is SO GOOD.
Spinach - The spinach makes it a bit more hearty, but truly is just an added hidden veggie because you know I’m all about that.
