I’m sure by now you all have seen a million versions of the viral crispy rice salad by now. I am here to say, with my completely unbiased opinion that mine is the best. This salad bowl is protein packed, flavourful and has so many fixings that I’m not even sure you can still call it a salad.
Some Notes on the Ingredients:
I know, there’s a lot of ingredients, but it is SO worth it.
Rice - any type of rice will work, but I used basmati. Make sure you rinse your rice so it isn’t clumped together.
Chicken - I added this in for extra protein and didn’t cook it in any specific way. Even leftover chicken without any strong flavours would work well, or skip it :)
Halloumi cheese - You can almost always find this in the cheese section of the grocery store. It adds tons of extra protein and if you are feeling fancy, toss it with some honey before adding it to the salad for an extra depth of flavour.
Fava beans - you can sub this for any beans, but I think fava beans go best.
Mixed greens - I used romaine when I made it, but spring mix will also work really well.
Marinated red onions - by marinating them, their strong flavour is weaker in the best way possible.
Sumac - This is a spice that you can find at most grocery stores in the International isle.

Will it Meal Prep?
ABSOLUTELY. This would make fantastic meal prep and will last up to 5 days in the fridge. Here are some tips:
Store all of the components in separate containers.

greens
