If you are craving takeout tacos, you have to try these quick and easy chipotle chicken tacos. They are everything you want in a taco, with extra hidden veggies that you won’t even notice.
Some Notes on the Ingredients:
Chicken thighs - I always opt for chicken thighs as opposed to chicken breast because I find that the breasts dry out much easier.
Zucchini - I’m trying to sneak in more veggies ok!
Chipotle peppers in adobo - In the international isle of the grocery store, you’ll find these in a can.
Corn tortillas - These work infinitely better than flour tortillas, trust me. Flour ones will get soggy in the oven.
Notes:
If the tacos are taking too long to crisp up at 425F, turn it up to broil and allow to cook for a few more minutes. Keep an eye on it though because it can burn fast.
