The fall weather always makes me want warm and cozy meals, which doesn’t usually = salad. BUT, this salad checks all the boxes with all the fall flavours AND comes together in 30 minutes. What more could you ask for?
Some Notes on the Ingredients:
Chicken thighs - Chicken breast would also work, but i would cut it into cubes first so that it cooks more evenly.
Acorn squash - Any other squash would also work. I would recommend butternut squash as an alternative!
Kale - I know. Kale sometimes sucks but trust me! It is wayyyy less bitter and more tender when you massage it beforehand. I find that it makes this salad so much more leafy and hearty.
Brussels Sprouts - My recent obsession is using shaved, uncooked brussels in salad. Seems random but it adds so much.
Apples - Any apple will do. Just not MacIntosh (unless you like them, but I do not).
Boursin Cheese - I love the maple and apple flavour, but regular goat cheese would also be a great alternative.
Notes:
If you are meal prepping this salad, just put the dressing on the bottom of your container, and layer it with the chicken, squash, apple, cheese, and then the kale/brussels mixture, in that order. This way when you are ready to eat it, you can just shake it and enjoy!
