This recipe is my way of calling out at mother nature to let the spring weather stay… PLEASE! These chicken burgers are the perfect quick dinner to switch things up without using a ton of different ingredients or time.
Some Notes on the Ingredients:
Ground chicken - if you want to switch this up for a different ground meat, it should work just as well. I just like how chicken was a neutral enough flavour.
Onion - make sure you chop these up as finely as possible so that you don’t get big chunks of onion in your burger - unless you like it that way.
Breadcrumbs - it seems like a lot of breadcrumbs - I know. This is what keeps the burger together without falling apart during cooking.
Thai sweet chili sauce - don’t skip this, it makes a big difference!
Chunky peanut butter - I like chunks of peanuts in it, but if you don’t, smooth peanut butter won’t make much of a difference.
Garlic powder - measure with your heart :)

Taste the topping and sauce as you are making it! This is the best way to have it come out the way you like it.
If you want to grill the burgers, you can freeze them until just set and that might help make them not break on the grill.
Meal Prep?
YES! These are a great meal prep. I would make the burgers, freeze them individually on a tray and then stack them in a ziploc bag to keep in the freezer. Then when you want a burger you can fix it with a peanut sauce and/or toppings of your choice.
