I would argue that there’s not much better than a warm chocolate chip cookie with a glass of milk. These cookies are crispy on the edges and perfectly chewy in the center, with an added crunch of walnuts. Whether you are making them for a party or just as a treat for your family, they are definitely a crowd-pleaser. The best part is they are pretty simple to whip up, and you might even need to make a double batch!
Some notes on the ingredients:
Salted butter - I like to use salted butter in this recipe because I find that it adds an extra depth of flavour. If you only have unsalted butter, DON’T WORRY! Use the same amount of butter, just add another tsp of salt.
Dark brown sugar - If you can tell, I like my cookies as rich and decadent as I can possibly make them. Any brown sugar works, but darker brown sugar just adds that extra molassesy flavour (not sure if that’s a word but you get it).
Egg and egg yolk - When you make this recipe, you can see that the dough is runnier than most cookie doughs, so the extra egg white was not needed. Also egg yolks add more richness.
Milk chocolate chips- I prefer milk chocolate chips in my cookies compared to semi-sweet, but use whatever you like! I find that the milk chocolate and walnuts complement each other well. Another tip - if you like bigger chunks in your cookies, chop up your favourite chocolate bar as a substitute for the chocolate chips!
Notes:
WTF is browning butter????
Great question, Emma. Browned butter has a rich, nutty, almost caramel-like flavour that isn’t too overpowering. By cooking the butter past its melting point, the water evaporates, and the milk solids caramelize. Since the water evaporates, we add ice during the cooling process to reintroduce that water, ensuring the dough isn’t too dry. Just make sure to continue stirring so the butter doesn’t burn. By the way, it also smells heavenly.
Why add the flour mixture half at a time?
Because I said so.
LOL. I like to use this trick to make sure that the dough doesn’t get overmixed, leaving you with a tough cookie. By adding the chocolate chips and walnuts to the flour, there’s less mixing overall that has to be done.
Thank you so much for reading! Follow me @emmasbites_ on instagram, send me your pictures of the recipe! Have a wonderful weekend :)
