Summer is here! To celebrate the start of a new season, I wanted to put out the perfect bite to have on those hot days when you just don’t want to put the oven on. Packed with protein, fiber, and vitamins, this vegetarian sandwich will keep you full and energized for hours! I recommend pairing it with a cold glass of lemonade and a good book by the pool. (Happy Place by Emily Henry would be my choice!)
Some Notes on Ingredients:
Sourdough bread: I always opt for sourdough bread because its natural fermentation process offers some great health benefits, making it much easier to digest compared to other types of bread. This leaves me feeling much less bloated as well.
Eggplant and zucchini: These happen to be my favourite grilled vegetables to put in a sandwich, but any substitutes like peppers, mushrooms, etc would also work very well. If you are a big fan of bell peppers, unfortunately you won’t see much of them on this blog, LOL.
Halloumi and Chickpeas: Having both of these ingredients in the sandwich provides a substantial amount of protein, which I always look to have in my meals as it helps me feel satiated and is important for muscle growth. If you’re a fitness freak like me, high protein is a must!
