There’s nothing better than a comforting bowl of chicken soup on a cold day. If you’re like me, buying whole chickens to save money and never know what to do with the leftover bones, here is the perfect use for them!
Some Notes on the Ingredients:
Onions, carrots, celery, and tomato - Don’t take too much time cutting these up, you could even leave them in whole if you want. It’ll just take more time for them to be cooked through.
Chicken carcass - Use what you have! If you don’t have a whole chicken carcass and just have some chicken bones from leftover rotisserie chicken, that works too!!
Thyme, in a spice bag? - The first time I tested this recipe I just threw the thyme in there and couldn’t stand having it floating around when I was eating it. So the spice bag really just keeps it contained. Not a necessary step though, only if you are annoying like me.
Water - I wrote 6 cups, but it depends on the size of your chicken and vegetables. There really should just be enough water to cover everything in the pot.
Tortellini - I LOVE the cheese stuffed ones, but any will work.
Notes:
If there is leftover broth, it freezes really well and can be used in anything!
