Looking for a different kind of salad for your next picnic? Well I have just the recipe for you. In my opinion, this salad is the perfect mix of salty, sweet, crunchy and fresh. Who knew watermelon could be sort of savoury?
Some Notes on the Ingredients:
Watermelon - In my research on how to pick the perfect watermelon at the grocery store, there are 2 extremely important things to look for:
The greener the outside, the better. AS LONG AS there is at least one large yellow spot on it.
Knock on the watermelon and if it sounds hollow, then you got your pick!
Mint Leaves - I like to stack the leaves on top of each other, roll them up and slice into thin strips. Cutting herbs this way allows for them to keep as much of their flavour and most importantly, not make your cutting board green. (Yet another skill I learned at my knife skills class that you will never hear the end of)
Notes:
If you don’t want the extra sweetness from the honey, you can leave it out and you will get a bit more of the acidic flavour from the vinegar.
